Cheese Love - Marching into Spring!

Let’s talk about the true appreciation of that magical substance we call cheese in the intimate setting of the lovely Brimmer & Heeltap in Ballard.

Come! Learn what makes these cheeses so fascinating and delicious! We’ll talk about the stories & lore of cheese and the science & art of cheesemaking.

It’s going to be a tasty time!

In this Spring class, we’ll taste 5 seasonal cheeses and 4 wines, focusing on the how seasonality makes them different and why. We’ll discuss how the styles of cheeses developed then taste them with wines to see how they pair and what changes, then add in other elements and see what happens. Is the whole greater than the sum of the parts?

Each class will be fun for the professional, the foodie and those who just know that love cheese but don’t have a clue why. Alison’s teaching style is all about making nerding out on the curd fun and informative.

Exploring the World of Cheese - Celebrate Spring! @ Chateau Ste. Michelle

In typical March fashion we’ll spend this first day of spring ‘in like a lion, and out like a lamb’ as we transition from Winter to Spring in the world of cheese. We’ll compare and taste big, bold wines and firm cheese as well as brighter wines and fresher cheeses. We’ll discuss why the season matters, and why we start to crave lighter fresher cheeses and wines as spring arrives.

Come enjoy an exploratory tasting class in the Visitor Center Theatre where you’ll enjoy 5 cheeses and pair them with 4 wines.

Alison is heading back to The Pantry in Ballard to teach the basics of fresh cheese making, using direct acids and cultures, and how to source cheese-making equipment and ingredients as you make whole milk ricotta, goat cheese, and hand-stretched mozzarella.
